About Sandi
I was born on a farm in 1946 nearby a little town called Frederick, South Dakota. Frederick only had approximately 500 + people who lived there, so every Saturday we had to drive to Aberdeen. South Dakota which was about a 30 minute drive each way to do all of our shopping for the week.
I have always loved cooking. My mother was a wonderful mentor as she always loved cooking and baking and showed me how to do it too. Her specialty was baking.
When I was old enough to read, I started cooking making my own food from recipe books. My first cookbook was a Mary Allen Junior cookbook. I made every recipe in the book and graduated with a certificate at the age of 10 years old. That cookbook was given to my granddaughter, Brie, when she was 10 years old.

SandiVegetable and Ground Beef Casserole
Vegetable and Ground Beef Casserole
- 1 1/2 Pounds ground beef
- 1/4-1/2 Cups onions
- 6-7 medium potatoes ((sliced))
- Salt and pepper to taste
- 5-6 carrots ((sliced))
- 2 Cans cream of chicken soup
- 1 Pint Half and Half
- Brown the ground beef with onions.
- Drain off fat.
- Layer potatoes, carrots, and ground beef in a large greased casserole.
- Season layers with salt and pepper to your own taste.
- Heat soup and the Half and Half, pour over layers and bake in a 375° oven for 1 1/2 hours approximately.
- May use green beans in place of carrots.

Stir-Fried Pork Tenderloin with Vegetables
Stir-Fried Pork Tenderloin with Vegetables
- 1 pork loin tenderloin ((about 3/4 pound))
- 3 Tbsp. soy sauce
- 1 Tbsp. dry or cooking sherry
- 2 1/2 Tsp. cornstarch
- 1 1/4 Tsp. sugar
- 1/8 Tsp. ground ginger
- Salad oil
- 1/2 bunch broccoli ((cut into bite-size pieces))
- 1/2 Pound mushrooms ((sliced))
- 1 carrot ((thinly sliced))
- 1/4 Tsp. salt
- 2 Tbsp. water
- About 30 minutes before serving, slice loin crosswise into 1/8-inch slices.
- In bowl mix pork with next 5 ingredients.
- In skillet over high heal in 3 tbsp. hot oil, cook broccoli, mushrooms, carrots, and salt, stirring quickly and frequently until vegetables are coated with oil.
- Add water and stir-fry until vegetables are tender-crisp.
- Spoon vegetables onto warm platter; keep warm.
- In same skillet over high heat in 2 tbsp. hot oil, cook pork mixture until pork loses its pink color, about 2-3 minutes, stirring quickly and frequently.
- Return vegetables to skillet and stir-fry until heated through. Makes 3 servings.

Classic Meatballs
Classic traditional meatballs that can be used as an appetizer or with any pasta dish. Don’t forget our recipe for the meat sauce as well.
- 2 Pounds ground beef
- 1 egg ((beaten))
- 1/2 Cup quick oatmeal
- 1 envelope onion soup mix
- 1 Cup milk
- Combine all but meat and soak 5 minutes.
- Add meat, mix well.
- Let stand in ice box 1 hour.
- Form into balls.
- Bake uncovered at 350° for 1 hour or longer, depending on how brown you desire.
- Place in a bowl and make gravy in pan they were baked in.
