Baked Zucchini Sausage Boats


Ingredients
- 4 medium unpeeled zucchini squash
- 1/4 lb. Italian sausage
- 1/4 cup chopped onion
- 1/4 cup soda cracker crumbs
- 1 slightly beaten egg
- garlic to taste
- parmesan cheese
Instructions
- Cook squash till tender, 10 minutes.
- Drain & cool.
- Cut zucchini in half, lengthwise.
- Scoop pulp out, leaving 1/4" rim.
- Chop pulp.
- Brown sausage, drain; add pulp & other ingredients.
- Fill shells, put in greased pan.
- Sprinkle with parmesan & extra cheese.
- Bake 350° uncovered for 25 minutes.
